Introduction
Comforting South African milk porridge scented with cinnamon and cardamom, with buttery crumbs stirred in for body.
Ingredients
- 2 L whole milk
- 1 cinnamon stick
- 2 cardamom pods, lightly crushed
- 125 mL sugar
- 300 mL cake flour
- 5 mL salt
- 25 mL butter
Directions
- Combine milk, cinnamon stick, cardamom pods, and sugar in a medium pot. Heat slowly to just below boiling.
- Mix flour and salt; rub in butter until crumbly.
- Remove cinnamon stick and cardamom pods from the hot milk. Sprinkle crumb mixture into boiling milk, whisking. Simmer 8 minutes, whisking, until slightly thickened. Remove from heat and serve immediately.
Tips
- Heat milk gently to avoid scorching; whisk constantly after adding crumbs to prevent lumps.
- Adjust sweetness to taste; remove whole spices before adding crumbs.
Optional Additions
- Serve with a knob of butter and cinnamon sugar on top; enjoy hot on cold evenings.
